Step 1
Preheat the oven to 400 degrees F (200 degrees C). Line two baking sheets with parchment paper.
Step 2
Place cottage cheese in a strainer lined with cheesecloth or heavy-duty paper towels. Let drain 5 to 10 minutes. Pat dry with paper towels; set aside. Place apples in a medium bowl; toss with lemon juice.

Combine cottage cheese, cream cheese,1/2 cup sugar, egg, and vanilla extract in the bowl of an electric mixer. Mix on high speed until almost smooth, 1 to 2 minutes.

Cut each puff pastry sheet into 9 pieces. Roll each piece into a 5 x 5-inch square.

Place a square in front of you so that it looks like a diamond. Spoon a generous amount of cheese filling down middle of each square, leaving 1/4 inch border at top and bottom edges. Fan out 4 to 5 slices of apple on top of cheese. Bring left and right corners together to meet in center; pinch to seal.
