Step 1
Preheat the oven to 350 degrees F (175 degrees C). Roll out pie crust onto a baking sheet.
Step 2
Toss apricots with white sugar in a medium bowl until evenly coated; set aside.
Step 3
Mix together almond meal, confectioners' sugar, and egg in a separate bowl to create a paste. Spread almond paste onto the center of pie crust, leaving 1/2 inch of bare crust all around the edge. Arrange sugared apricots over almond paste.
Step 4
Fold the 1/2-inch bare edge of crust inward over almond paste and apricots, leaving the center of tart uncovered. Crimp the edges down with a fork as you go around tart.
Step 5
Bake in the preheated oven until crust is golden brown, about 40 minutes. Brush melted apricot jam over galette. Slice and serve hot.
