Recipe Instructions

Step 1
Preheat the oven to 325 degrees F (165 degrees C).

Combine rice and 2 cups water in a 3-quart saucepan. Bring to a boil; reduce heat, cover, and simmer until tender and water is absorbed, about 25 to 30 minutes.

Mix egg yolks, half-and-half, sugar, vanilla extract, and salt together in a large bowl until combined.
Step 4
Stir in cooked rice and raisins. Transfer into a 10x6x2-inch baking dish.
Step 5
Bake uncovered in the preheated oven for 40 minutes; stirring halfway through, until the pudding is set but still creamy and a knife inserted near the center comes out mostly clean. Sprinkle with nutmeg and let cool slightly before serving warm.
