Recipe Instructions

Step 1
Put squash halves, cut-side up, on a microwave-safe plate or dish. Place 2 tablespoons butter and 2 tablespoons brown sugar into the cavity of each half.
Step 2
Cook in the microwave on full power until flesh is soft, 8 to 10 minutes. Rotate squash a couple of times to ensure even cooking.
Step 3
Scoop out flesh along with sugar and butter and place into a medium bowl. Mash slightly to blend.
Step 4
Serve in a bowl or in the squash shells.
