Recipe Instructions

Step 1
Remove roast from the oven, slice, and serve.

Roast the 4-pound roast in the preheated oven for 20 minutes. (If your roast is larger or smaller than 4 pounds, multiply the exact weight times 5 minutes.)

Gather the ingredients. Place prime rib roast on a plate and bring to room temperature, 2 to 4 hours. (If you have time, 6 hours is ideal for even internal temperature.) Preheat the oven to 500 degrees F (260 degrees C).

Mix softened butter, black pepper, and herbes de Provence in a small bowl until well combined. Spread the mixture evenly over the entire roast. Season generously with kosher salt.

Turn off the oven, but do not open the door. Leave the roast in the oven for 2 hours. Do not open the door at any point during this time; the trapped heat finishes cooking the meat perfectly.
