Step 1
Preheat the oven to 300 degrees F (150 degrees C). Grease a 9-inch springform pan with butter and line the bottom with parchment paper.
Step 2
Heat 1 1/4 cups butter, chocolate, and coffee granules in the top of a double boiler, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
Step 3
Beat egg yolks and sugar together in a large bowl with an electric mixer until thick and lemon-colored. Fold into chocolate mixture until well combined; set aside.
Step 4
Beat egg whites in a large glass or metal mixing bowl until stiff peaks form. Fold 1/3 of the whites into chocolate mixture, then quickly fold in remaining whites until no streaks remain. Pour 2/3 of the mixture into the prepared springform pan; cover and refrigerate remaining 1/3 of the batter.
Step 5
Bake in the preheated oven until filling is just firm in the center, about 40 minutes. Allow to cool, then remove cake from the pan and refrigerate for 1 hour.
Step 6
Spread remaining mousse over cooled cake and refrigerate for 8 hours to overnight.
