Step 1
Heat oil in a large skillet over medium heat.

Mix breadcrumbs, Parmesan cheese, and garlic salt in a shallow bowl. Beat eggs in a second shallow bowl.

Dip zucchini slices into egg, then into breadcrumbs. Fry in a single layer until golden brown, about 3 minutes. Flip and fry the other side until tender and golden brown. Sprinkle mozzarella over slices; cook until cheese melts, 1 to 2 minutes more.
