Recipe Instructions

Step 1
Preheat oven to 350 degrees F (175 C).
Step 2
Toss zucchini with baking mix in a large bowl until well coated. Add beaten eggs, melted butter, and Parmesan and mozzarella cheeses; work mixture together using a large spoon or your hands until well blended. Add onion, garlic, oregano, parsley, salt, and pepper, and mix again. Spread mixture into a 13x9-inch baking pan.
Step 3
Bake in the preheated oven until a toothpick inserted in the center comes out clean and top is golden brown, 30 minutes. Serve warm or at room temperature.

  • 1 teaspoon minced garlic
  • 2 tablespoons chopped fresh parsley
  • 3 zucchini, thinly sliced or shredded
  • 1 cup all-purpose biscuit baking mix
  • 0.5 cup butter, melted
  • 0.5 teaspoon salt
  • 0.5 cup chopped onion
  • 0.5 teaspoon dried oregano
  • 0.5 cup grated Parmesan cheese
  • 0.25 teaspoon pepper
  • 0.5 cup shredded mozzarella or Cheddar cheese
