Recipe Instructions

Step 1
Combine 1/2 bunch cilantro, 1 tomato, onion, and serranos (including seeds) in a food processor; process until smooth. Add rice vinegar and oil; pulse until smooth.
Step 2
Stir mango, remaining 1/2 bunch cilantro, bell pepper, corn, remaining tomato, sugar, and cumin together in a medium bowl. Stir in serrano pepper mixture. Season to taste with salt and pepper. Chill for 1 hour before serving.

  • 0.5 cup chopped green bell pepper
  • 0.25 teaspoon ground cumin
  • 0.5 cup fresh corn kernels
  • 0.25 cup coarsely chopped red onion
