Recipe Instructions
Step 1
Combine 1 cup cold milk and ¾ cup flour to make a soft paste; set aside.
Step 2
Dissolve rennet in water in a small bowl; set aside.
Step 3
Add remaining 15 cups milk to a saucepan; attach a candy thermometer to the saucepan and heat until lukewarm and reaches 98 to 102 degrees F (36 to 39 degrees C). Off heat, stir in flour paste and dissolved rennet, stirring often until milk begins to set; cover the pan and set aside until firm, about 1 hour.
Step 4
Break up milk mixture using gentle hands, taking care to keep curds intact; strain and discard most of the whey, or strain and set aside for another use.
Step 5
Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
Step 6
Combine eggs, cream, and sugar in a bowl; stir into strained curd. Pour into the prepared baking dish; gently spread to flatten top.
Step 7
Bake in the preheated oven for 30 minutes. Reduce the oven temperature to 325 degrees F (165 degrees C); continue baking until set and browned on top, about 30 minutes more. Cool before serving. Store in the refrigerator.
