This pizzadilla (grilled pizza sandwich) recipe is a riff on a Papadia. Chef John uses prepared pizza dough and sauce, sausage, mushrooms, and mozzarella.

Step 1
Repeat with remaining pizza dough and toppings. Cut each pizzadilla in half and serve.
Step 2
Divide dough into 4 equal pieces. Roll each piece into a 1/8-inch-thick circle on a lightly floured surface.

Heat a skillet over medium-high heat; brush with oil. Add 1 dough piece; reduce heat to medium. Cook for 2 minutes; flip. Spread 1/4 cup sauce over dough, leaving about 1/2 inch edge; sprinkle 1/4 mozzarella cheese on top sauce. Top half of cheese with 1/4 each sausage, mushrooms, and red onion. Press gently in middle of dough with a spatula to make a crease; fold in half.

Brush top crust with olive oil; flip. Repeat on other side. Continue cooking until both sides reach desired browning and crispness.
