Recipe Instructions

Step 1
Bring water to a boil in a large saucepan. Add quinoa; reduce heat to low. Cover and simmer until water absorbs, about 15 minutes. Let cool.
Step 2
Combine onions, bell peppers, 1 teaspoon salt, and 1/2 teaspoon black pepper together in a bowl; stir in quinoa.
Step 3
Whisk oil and lime juice together in a separate bowl; pour over quinoa mixture. Stir to coat. Add cilantro; stir until well combined. Cover and refrigerate to let flavors blend, at least 4 hours.
