Combine cauliflower, broccoli, potatoes, bell peppers, onion, and carrots in a large bowl; season with garlic powder, parsley, cilantro, Italian seasoning, salt, and black pepper. Add chicken sausages, Italian sausages, and oil; toss to combine. Transfer to the prepared baking sheet.
