Step 1
Scoop out flesh from zucchini halves, leaving shells with a thickness of about 1/8 inch. Save zucchini flesh for another use. Set zucchini halves aside.

Combine tomatoes, basil, 1/4 cup oil, garlic, Italian herb seasoning, sugar, salt, and pepper together in a food processor. Pulse until blended, about 1 minute.

Heat 3 tablespoons oil in a large skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add sausage; cook, stirring often, until brown and crumbly, about 10 minutes. Stir in tomato mixture; cook until it simmers. Mix in Parmesan cheese.
