Recipe Instructions

Step 1
Scoop out flesh from zucchini halves, leaving shells with a thickness of about 1/8 inch. Save zucchini flesh for another use. Set zucchini halves aside.
Step 2
Combine tomatoes, basil, 1/4 cup oil, garlic, Italian herb seasoning, sugar, salt, and pepper together in a food processor. Pulse until blended, about 1 minute.
Step 3
Heat 3 tablespoons oil in a large skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add sausage; cook, stirring often, until brown and crumbly, about 10 minutes. Stir in tomato mixture; cook until it simmers. Mix in Parmesan cheese.
Step 4
Place zucchini shells, cut side up, in a large slow cooker; trim to fit if necessary. Spoon sausage mixture into shells; cover and cook on High until tender, about 6 hours. Spread a layer of mozzarella cheese over each zucchini. Cover; cook on High until cheese melts, about 10 minutes.

  • 2 large zucchini, trimmed and halved lengthwise
  • 4 ripe tomatoes, cored
  • 0.5 teaspoon ground black pepper
  • 0.25 cup grated Parmesan cheese
  • 0.75 teaspoon salt
  • 0.25 cup olive oil
