Recipe Instructions

Step 1
Preheat an outdoor grill for medium heat.
Step 2
Rub tomatoes with oil and place on preheated grill. Cook for 10 minutes and turn. Place bell pepper, poblano, Anaheim, and jalapeño on grill, cooking 5 to 7 minutes per side.
Step 3
Transfer tomatoes to a separate bowl. Place peppers in an airtight container. Cool.
Step 4
Peel tomatoes. Drain. Peel and seed peppers.
Step 5
Combine tomatoes, peppers, onion, cilantro, vinegar, salt, and garlic in the bowl of a food processor; pulse until blended. Add liquid smoke and pulse until salsa reaches your desired consistency.

  • 1 large green bell pepper
  • 4 Anaheim chile peppers
  • 4 poblano peppers
  • 8 ripe plum tomatoes
  • 1 jalapeno chile pepper, or more to taste
  • 2 tablespoons chopped cilantro leaves
  • 0.25 onion
  • 0.25 teaspoon mesquite flavored liquid smoke concentrate
