Recipe Instructions

Step 1
Heat a large skillet over medium heat. Add chicken; cook, stirring and breaking into small pieces, until no longer pink, about 5 minutes. Stir in onion and scallions; cook until onion is softened and chicken begins to brown, about 2 minutes.
Step 2
Add lime juice, cilantro, mint, ginger, lemongrass, fish sauce, and red pepper flakes. Cook, stirring, until flavors blend, about 3 minutes. Season to taste with salt.

  • 1 tablespoon finely chopped fresh mint
  • 1 teaspoon fish sauce, or more to taste
  • 0.25 cup sliced scallions (mostly white parts)
