Vegan Al Pastor Tacos

Recipe Instructions

Step 1
Bring a large pot of water to a boil. Once boiling, add soy meat and turn off heat immediately. Let soak for 5 to 10 minutes, then drain.
Step 2
Meanwhile, remove stems and seeds from guajillo peppers. Cut peppers in half.
Step 3
Bring a small pot of water to a boil. Place guajillo peppers in the boiling water and boil for 10 minutes. Drain.
Step 4
Place chipotle chiles in a blender, reserving all adobo sauce. Add guajillo peppers, onion, garlic salt, oregano, and pepper; process until fully blended.
Step 5
Heat oil in a large skillet over medium-high heat. Add soy meat and fry until browned, about 15 minutes. Add pineapple chunks and cook for another 15 minutes. Pour in reserved adobo sauce and cook for 5 more minutes.
Step 6
Add a large spoonful of the soy mixture to the center of each warmed tortilla.

  • ¼ teaspoon dried oregano
  • 1 tablespoon garlic salt
  • ¼ teaspoon black pepper
  • ¼ cup oil
  • 10 (6 inch) flour tortillas, warmed
  • ¼ medium onion, chopped
  • 1 (8 ounce) bag Soy protein isolate
  • 10 peppers dried guajillo chile peppers
  • 4 (7 ounce) cans chipotle chiles in adobo sauce
  • ½ cup pineapple chunks, cut into squares
