Beef and Okra Bamia

A simple, intensely spiced, Middle Eastern-style stew made with okra and tomato sauce. Swap the steak for potatoes or chickpeas for a vegetarian version.

Recipe Instructions

Step 1
Heat olive oil in a large saucepan over high heat. Sprinkle 1 tablespoon salt over meat cubes. Add meat, onion, and garlic to the pan and cook until meat begins to brown, about 5 minutes. Reduce heat to medium and continue to cook, about 3 more minutes. Remove meat and set aside.
Step 2
Stir tomato sauce and tomato paste into the pan. Add okra, water, coriander, white pepper, and cumin. Bring to a boil. Season with salt to taste, reduce heat to low, and simmer until okra is tender, 30 to 45 minutes.
Step 3
Return meat to the pan. Simmer until flavors are blended, about 10 minutes. Serve garnished with slices of jalapeño pepper.

  • 1 pound beef top sirloin, cut into 1-inch cubes

  • 1.5 tablespoons ground coriander
