Step 1
Preheat a waffle iron according to manufacturer's instructions. Mix flour, oats, sugar, baking powder, and salt together in a large bowl.

Beat egg yolks together. Add buttermilk, milk, and butter. Beat until well combined. Pour buttermilk mixture into flour mixture. Beat until well combined.
Step 3
Beat egg whites and vanilla extract together in a bowl until soft peaks form. Fold 1/2 of the egg whites into buttermilk batter until combined. Repeat with remaining 1/2 of the egg whites.
Step 4
Ladle batter into preheated waffle iron. Cook until waffles are golden and crisp, about 5 minutes. Transfer to a paper towel-lined plate to prevent sogginess. Repeat with remaining batter.
