Recipe Instructions

Step 1
Preheat the oven to 425 degrees F (220 degrees C).
Step 2
Cook bacon in a large skillet over medium-high heat until crisp. Drain on a paper-towel lined plate. Crumble when cool.
Step 3
Spread ham, red peppers, and corn in separate sections on a parchment-lined baking sheet.
Step 4
Bake in the preheated oven 10 minutes, tossing half way through.
Step 5
Layer corn on the bottom of the Mason jar. Top with halved cherry tomatoes.
Step 6
Layer ham over tomatoes. Add red peppers, shredded cheese, and mixed greens. Top with bacon and tortilla strips.
Step 7
Pair with your favorite salsa or dressing.

  • 8 cherry tomatoes, halved
  • 2 cups mixed salad greens
  • 1 ounce Monterey Jack cheese, shredded
  • 1 quart-size canning jar
