Step 1
Cream butter, vanilla, salt, and peanut butter together in a large bowl until smooth. Stir in 2 cups confectioners’ sugar, pecans, and 2 cups graham cracker crumbs. If the mixture feels too soft to roll, add up to ½ cup more crumbs as needed for shaping.
Step 2
Form the mixture by hand into 1 inch balls. Roll each ball in the remaining cup of confectioners' sugar. Arrange on a parchment-lined baking sheet and refrigerate until firm, about 30 minutes. At this point the cookies may be dipped in melted chocolate or they can be left plain.
Step 3
To coat the balls in chocolate: Melt chocolate chips and shortening together in the top of a double boiler over hot water until smooth. Remove from heat but keep over warm water.
Step 4
Insert a toothpick into each chilled ball and dip into melted chocolate until coated. Set on waxed or parchment paper until hardened. Store in an airtight container in the refrigerator. Serve chilled or at room temperature.
