Recipe Instructions

Step 1
Place potatoes in a large pot and cover with salted water; bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 12 minutes. Drain; steam dry while preparing dressing.
Step 2
Whisk mayonnaise, apple cider vinegar, dill, salt, and black pepper together in a large bowl; stir in green onions and cucumber.
Step 3
Add warm potatoes to dressing; toss gently to coat. Cover bowl; refrigerate for at least 2 hours before serving.
