Recipe Instructions

Step 1
Divide gazpacho among 4 bowls and top each with blueberries.
Step 2
Place 6 cups watermelon, 1/2 of the cucumber, jalapeño pepper, and vinegar into a blender; blend until soup is smooth. Pour gazpacho into a large bowl and stir in remaining 2 cups watermelon and cucumber. Refrigerate until chilled, at least 30 minutes.
