Recipe Instructions

Step 1
Cook potatoes in boiling salted water until just tender, about 20 minutes. Drain potatoes, transfer to a large bowl, and cool slightly.
Step 2
Meanwhile, heat a large skillet over medium heat. When the skillet is hot, add oil. When oil is hot, add sliced ham and cook until lightly browned with crispy, golden edges, about 5 minutes.
Step 3
Fold onion, vinegar, mustard, sugar, and chives into potatoes. Taste for seasoning.
