Step 1
Mix 2 cups of flour with baking soda and baking powder in a medium bowl. Mix the remaining 1 1/2 cups flour with ginger, cloves, cinnamon, and allspice in a separate bowl.
Step 2
Layer ingredients in a 1-quart wide mouth canning jar, starting with flour and baking powder mixture, then brown sugar, and finally flour and spice mixture. Pack firmly between layers.
