Step 1
Combine tomatoes and ginger in the bowl of a food processor; pulse until blended, working in 3 to 4 batches.

Place tomato mixture in a large Dutch oven. Stir in sugar, 2 tablespoons lemon juice, orange juice, lemon zest, orange zest, and salt until thoroughly combined. Bring to a boil over medium-high heat, stirring occasionally.
Step 3
Attach a candy thermometer to the side of the pan. Reduce heat to medium-low and cook, stirring occasionally, until mixture reaches a temperature of 215 degrees F to 220 degrees F (101 to 105 degrees C), 45 minutes to 1 hour.
Step 4
Remove jam from heat and stir in remaining 1 tablespoon lemon juice. Cool, 3 hours.
