Step 1
Heat olive oil in a pot over medium heat. Saute onion in the hot oil until soft, about 5 minutes. Add sweet potato, bell pepper, carrots, celery, and garlic. Cook and stir entire mixture for 5 minutes; don't burn.

Stir in kidney beans, tomatoes, black beans, garbanzo beans, chili powder, salt, cumin, oregano, and bay leaf. Cover and let simmer, 40 to 50 minutes.
