Recipe Instructions
Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
Bake in the preheated oven until hot and bubbling, about 35 minutes.
Step 3
Cook and stir ground beef, onion, 1 can green chiles, and taco seasoning in a large skillet over medium-high heat until meat is crumbly and browned, 6 to 8 minutes. Drain excess fat and set aside.
Step 4
Stir together condensed soups, sour cream, and remaining can of green chiles in a medium saucepan over medium-low heat until warm, about 10 minutes. Pour about 1/2 of the warmed sour cream mixture into a 9x13-inch baking dish.
Step 5
Spoon ground beef mixture in the center of each tortilla. Roll up tortillas and place on top of sour cream mixture in the baking dish. Pour remaining sour cream mixture over tortillas and top with Cheddar cheese.
Step 6
Top enchiladas with lettuce, tomatoes, and olives to serve.
