Step 1
Add enough oil to a large stockpot to thinly coat the bottom, and heat on medium. Add 1 onion, carrots, garlic, red pepper flakes, Greek seasoning, rosemary, thyme, basil, Italian seasoning, bay leaf, salt, and pepper. Cook, stirring onion mixture until it begins to soften and brown, about 15 minutes.
Step 2
Add tomatoes and ground beef, breaking apart with a wooden spoon. Bring to a boil, and continue to cook until ground beef is cooked through and carrots are tender, about 10 minutes.
Step 3
Add potatoes, remaining onion, and celery. Cook until potatoes are tender, 15 to 20 minutes. Remove from heat and let sit 20 to 30 minutes before serving.
