Place flour onto a large plate and season with salt and pepper. Whisk together milk and beaten egg in a shallow bowl until well combined. Place bread crumbs onto another large plate.

Dredge fish fillets in flour mixture; shake off excess. Dip into egg-milk mixture; lift up so excess egg-milk mixture drips back into the bowl. Press into bread crumbs until thoroughly coated.
