Recipe Instructions

Step 1
Heat oil in a large saucepan over medium heat. Add onion and garlic; cook and stir until golden, about 1 to 2 minutes. Stir in curry powder and tomato paste, cook and stir for 2 to 3 minutes.
Step 2
Stir in tomatoes, vegetable bouillon cube, mixed vegetables, water, salt and pepper to taste. Simmer until vegetables are very soft and tender, 20 to 30 minutes. Sprinkle with fresh cilantro and serve.

  • 1 cube vegetable bouillon

  • 2 tablespoons tomato paste
  • 2 tablespoons chopped fresh cilantro
  • 1.5 cups water
  • 2.5 tablespoons curry powder
