Step 1
Preheat an outdoor grill for medium heat and lightly oil the grate.
Step 2
Combine white sugar, brown sugar, seasoned salt, paprika, black pepper, garlic powder, onion powder, and cayenne pepper in a container with a lid; shake until evenly combined.
Step 3
Generously rub both sides of each rib rack with spice rub.
Step 4
Place rib racks on top grill shelf with meaty sides facing out, stacked one in front of the other at an angle. Turn off heat directly below the ribs; turn other burner on low. Close the grill lid; cook 30 minutes.
Step 5
Flip ribs so the closest side to the flame is the furthest side and the meaty side is still facing forward and the rack that was in the front is now in the back. Continue cooking until outsides are crispy and meat is tender, about 5 hours, flipping every 30 minutes. Slice into small chunks.
Step 6
Place 1 rib rack, meaty-side down, in center of main grill grate; cook 5 minutes, then move to far side of top grill shelf, meaty-side up. Repeat process with remaining 3 rib racks.
