Recipe Instructions

Step 1
Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
Step 2
Whisk olive oil, ranch dressing mix, vinegar, and black pepper together in a small bowl and pour into a gallon-sized resealable plastic bag. Add potatoes, carrots, and onion, coat with marinade, squeeze out excess air, and seal the bag. Marinate for at least 15 minutes.
Step 3
Transfer vegetables and marinade to the prepared baking dish.
Step 4
Bake in the preheated oven until vegetables are tender, about 1 hour, stirring a few times. Turn on the broiler and broil until vegetables crisped, for the last 5 minutes. Season with salt before serving.
