Recipe Instructions
Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
Bake in the preheated oven for 12 minutes.
Step 3
Beat together butter and brown sugar in a large bowl until light and fluffy. Beat in egg yolks until incorporated, then stir in vanilla. Add flour and mix well. Set dough aside.
Step 4
Whisk egg whites in a shallow dish, such as a pie pan, until foamy. Spread walnuts on a plate or waxed paper.
Step 5
Roll 1 teaspoon dough into a ball; roll in egg whites, then in walnuts. Place 2 inches apart on a cookie sheet. Repeat with remaining dough. Make a depression in each ball with your thumb.
Step 6
Meanwhile, beat 2 tablespoons butter with corn syrup, almond extract, and blue and green food coloring. Gradually stir in confectioners' sugar until incorporated. Roll 1/2 teaspoon fondant mixture into egg-shaped balls. Repeat with remaining fondant mixture.
Step 7
Place fondant eggs into the hollows of baked cookies.
