Recipe Instructions

Step 1
Combine soy sauce, black pepper, vinegar, hot pepper sauce, and Worcestershire sauce in a large, nonporous bowl; add sliced sirloin and mix well to coat. Cover the bowl with plastic wrap and marinate in the refrigerator overnight.
Step 2
Arrange beef slices, unstacked, onto wire racks. Place the racks into an outdoor smoker. Add wood chips according to manufacturer's directions. Smoke over low heat until edges of beef slices appear dry with just a slight hint of moisture in the center, about 6 to 8 hours.

  • 1 cup soy sauce
