Recipe Instructions

Step 1
Heat butter and olive oil in a large skillet over medium heat. Add onions and garlic, and cook until onions are slightly tender, being careful not to burn garlic.
Step 2
Add tomato sauce and cherry tomatoes. Bring to a simmer. Stir in green olives and marinated vegetables. Season with black pepper, cayenne pepper, and paprika.
Step 3
Add cod fillets and cook over medium heat until fillets easily flake with a fork, 5 to 8 minutes. Serve immediately.

  • 15 cherry tomatoes, halved
  • 1 cup tomato sauce
  • 1 dash cayenne pepper
  • 1 dash black pepper
  • 2 tablespoons chopped fresh garlic
  • 6 (4 ounce) fillets cod fillets
  • 0.25 cup finely chopped onion
  • 0.5 cup chopped green olives
  • 0.25 cup deli marinated Italian vegetable salad, drained and coarsely chopped
