Recipe Instructions

Step 1
Heat oil in a large pot over medium heat. Add onion and garlic. Cook, stirring until onion softens and turns translucent, about 5 minutes. Add mustard, sugar, vinegar, and chicken broth. Bring to a boil over high heat. Stir in kale, cover, and cook until wilted, about 5 minutes.
Step 2
Add dried cranberries, and continue boiling, uncovered, until liquid reduces by about half and cranberries soften, about 15 minutes. Season to taste with salt and pepper. Sprinkle with sliced almonds before serving.

  • 1 small onion, diced
  • 1 tablespoon Dijon mustard
  • 4 cups stemmed, torn and rinsed kale
  • 1.5 cups chicken broth
  • 0.25 cup dried cranberries
  • 0.25 cup sliced almonds
