Recipe Instructions

Step 1
Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, reserving grease in the skillet. Roughly chop bacon into large chunks and transfer to a large pot.
Step 2
Cook sausages in the skillet in the reserved bacon grease until browned, turning occasionally, about 5 minutes. Transfer to the pot.
Step 3
Add onion to the skillet and cook until softened, about 5 minutes. Transfer to the pot.
Step 4
Arrange potatoes over onion in the pot. Pour in enough water to cover potatoes. Cover the pot and bring to a boil. Reduce the heat to the lowest temperature and simmer until potatoes are tender, 60 to 90 minutes. Garnish with parsley.
