Preheat the oven to 350 degrees F (175 degrees C). Grease two (8 1/2 x 4 1/2-inch) loaf pans.

Stir together flour, sugar, cinnamon, baking powder, and salt in a large bowl until well combined. Make a well in the center and add pineapple, mango, eggs, oil, coconut, nuts, and vanilla; mix well. Divide batter between the prepared loaf pans.

Bake in the preheated oven until a toothpick inserted into the centers of loaves comes out clean, 45 to 50 minutes. Cool in the pans for 5 minutes. Remove loaves from the pans and cool completely on a wire rack.

Make glaze: Whisk together powdered sugar, hot tap water, melted butter, and vanilla in a large bowl until smooth. Add more hot tap water to reach desired consistency. Pour over cooled loaves.
