Recipe Instructions

Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
Step 2
Sift flour, sugar, baking soda, cinnamon, and salt into a bowl. Stir in mango and nuts. Add oil, eggs, and vanilla and combine until just mixed, do not overmix or loaf will be tough. Pour into the prepared pan.
Step 3
Bake in the preheated oven until a toothpick inserted into the center comes out with little to no crumbs, about 1 hour. Loaf should pull away from sides of pan and bounce back easily when touched.

  • 2 teaspoons ground cinnamon
  • 2 tablespoons vanilla extract
  • 2 teaspoons baking soda
  • 3 large eggs, beaten
  • 2 cups chopped mango
  • 0.5 cup chopped walnuts
  • 0.5 teaspoon salt
  • 1.5 cups white sugar
  • 0.75 cup vegetable oil
