This is a great recipe I adapted for vegans. It turns out fantastic every time and got great reviews from my dad who is not a vegan. Serve alone or with vanilla soy ice cream.

Recipe Instructions

Step 1
Preheat the oven to 425 degrees F (220 degrees C).
Step 2
Prepare topping: Stir baking mix and water together in a bowl until thoroughly combined; do not overwork. Mix almonds, raw sugar, and cinnamon together in a separate bowl. Set both aside.
Step 3
Prepare filling: Combine raw sugar, raisins, cinnamon, allspice, nutmeg, pepper, and salt in large bowl. Add thawed peach slices and toss to coat.
Step 4
Transfer peach mixture to an 8-inch square glass baking dish. Top with cobbler topping, using your fingers to press it out evenly. Sprinkle sugared almonds over top.
Step 5
Bake in the preheated oven until cobbler top is firm and lightly golden and peaches are bubbly and hot, 20 to 25 minutes. Serve hot.

Ingredients

  • ¼ teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • ½ cup water
  • ½ teaspoon ground allspice
  • 1 tablespoon ground cinnamon
  • ⅓ cup golden raisins
  • ¼ cup slivered almonds
  • ⅛ teaspoon black pepper
  • 2 ¼ cups all-purpose baking mix (such as Bisquick®)
  • 2 tablespoons turbinado (raw) sugar
  • Peach Filling:
  • ½ cup turbinado (raw) sugar
  • 5 ½ cups frozen peach slices, thawed
