This is another recipe that mom made for us frequently, especially in the summer, because they are a 'no-bake' cookie and freeze well. We'd eat them straight out of the freezer and, man, were they good!

Recipe Instructions
Step 1
Combine dates, sugar, milk, and butter in a saucepan and cook over medium-low heat until thick, 5 to 10 minutes. Set aside to cool.
Step 2
Add egg, vanilla extract, and salt to the date mixture; stir to combine. Add crispy rice cereal and walnuts and mix very well.
Step 3
Pour coconut into a shallow bowl. Shape the date mixture into balls and roll in the coconut.
