Preheat the oven to 325 degrees F (165 degrees C). Lightly grease the insides of 8 straight-sided, wide-mouth pint canning jars.

Sift flour, baking soda, salt, cinnamon, and nutmeg together in a large bowl. Set aside.

Beat sugar and shortening together in a medium bowl until fluffy. Beat in eggs until well combined. Add flour mixture, alternating with water; mix until smooth. Fold in apples, raisins, and nuts.

Fill jars 1/2 full of batter; wipe off any batter that gets on the rims. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
