Preheat an outdoor grill for medium heat and lightly oil the grate.

Cook on the preheated grill, turning frequently, until bacon begins to crisp, about 5 minutes.

Combine steak seasoning sauce, 6 tablespoons brown sugar, scallions, and bourbon in a large bowl. Add salmon cubes; toss to coat. Cover the bowl with plastic wrap; marinate in the refrigerator, 4 to 6 hours.

Remove salmon cubes from marinade and shake off excess. Discard remaining marinade.
