Step 1
Preheat the oven to 500 degrees F (260 degrees C). Cover a baking sheet with a lightly greased double thickness of aluminum foil.

Trim all of the dark meat from fillets. Rinse in cold water, dry, and season with salt and pepper.
Step 3
Combine stuffing mix, boiling water, and 1/2 cup melted butter in a medium bowl. Spread stuffing evenly over the prepared baking sheet. Place fillets on top of stuffing. Brush fillets with 2 tablespoons melted butter and sprinkle with minced onion. Top with dill sprigs and crimp together the edges of aluminum foil to seal.
Step 4
Bake on the center rack of the preheated oven for 10 minutes. Reduce oven temperature to 400 degrees F (200 degrees C) and bake until fish flakes easily with a fork, about 20 to 30 minutes more.
