Step 1
Add potatoes and lightly salted water to a large pot; bring to a boil. Reduce heat to medium-low; simmer until tender, about 20 minutes. Drain and cool. Slice potatoes and transfer to a large bowl. Set aside.

Cook and stir onion, celery, bacon, and pepper rings in a large skillet until bacon is brown and celery begins to soften, about 10 minutes.

Mix mayonnaise, pepper juice, mustard, horseradish, lemon juice, and Creole seasoning together in a bowl until dressing is well blended.
