Recipe Instructions

Step 1
Heat a large nonstick skillet on high; add onion, tomato, jalapeño, and cilantro. Saute until tender.
Step 2
Add eggs; let cook until set. Flip and cook the other side. Remove eggs from the skillet.
Step 3
Heat tortillas in the skillet until warm. Place one tortilla on a plate, top with egg mixture and cheese. Top with 1 tablespoon guacamole, and 1 tablespoon sour cream. Repeat with remaining tortillas.
