Preheat the oven to 425 degrees F (220 degrees C).

Press 1 crust into a 9-inch pie plate; set aside remaining crust.

Pour lemon juice into a bowl large enough to fit apples; fill halfway with cold water. Peel and slice apples; add to lemon water and set aside.

Melt butter in a large saucepan over medium heat. Stir in cornstarch and flour until forms a paste. Stir in 1/2 cup white sugar, brown sugar, 2 tablespoons water, vanilla extract, 1 teaspoon cinnamon, and nutmeg; bring to a simmer. Drain apples; add to sugar mixture along with cranberries. Cook and stir 5 minutes; remove from heat and cool slightly.

Pour apple mixture into crust in the pie plate; press remaining crust on top. Combine 1 tablespoon white sugar and remaining 1/2 teaspoon cinnamon; sprinkle over pie.
