Recipe Instructions

Step 1
Heat olive oil in a Dutch oven or large pot over medium-high heat. Add chorizo; cook and stir until heated through, about 2 minutes. Transfer chorizo to a bowl using a slotted spoon. Add chicken; cook and stir until browned and crumbly, 5 to 6 minutes. Season with chili powder and cumin.
Step 2
Stir chorizo, black beans, white beans, onion, bell pepper, and garlic into chicken; cook and stir until onion begins to soften, 5 to 6 minutes. Add beer; bring to a simmer. Add tomatoes, chicken stock, and tomato paste; simmer until heated through, about 5 minutes. Season with salt. Reduce heat to low and simmer until flavors blend, about 30 minutes.

  • 1 tablespoon extra-virgin olive oil
  • 1 (15 ounce) can white beans, drained
  • 1 (28 ounce) can fire-roasted diced tomatoes, with juice
  • 1.5 tablespoons ground cumin
  • 0.25 cup chili powder
  • 0.75 pound chorizo sausage, chopped
