Recipe Instructions

Step 1
Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; lightly grease with 1 teaspoon olive oil.
Step 2
Arrange chicken pieces on the prepared baking sheet; season both sides chicken pieces with salt and black pepper.
Step 3
Combine ⅔ cup olive oil, garlic, red wine vinegar, thyme, rosemary, oregano, and pepper flakes in a blender; blend until smooth and creamy.
Step 4
Cut several deep incisions into each piece chicken using a sharp knife; place chicken in a large bowl. Pour garlic marinade over chicken; toss to distribute into incisions and to coat chicken pieces. Cover bowl with plastic wrap; marinate in the refrigerator 8 hours to overnight.
Step 5
Bake in the preheated oven until an instant-read thermometer inserted into the thickest chicken piece, near but not touching bone, reads 160 degrees F (70 degrees C), 40 to 45 minutes. Top with parsley.
